Preheat oven to 300°F. Cut the chuck roast into 4 pieces, season generously with salt and pepper. Sear in a Dutch oven over medium-high heat with 2 tbsp olive oil until browned on all sides (about 2 min per side). Remove and set aside. 2. Lower the heat to medium and add 2 tbsp butter to the pot. Add the carrot, celery, and onion. Season with Italian seasoning, red pepper, salt and pepper. Sauté until softened, about 8–10 minutes. 3. Add minced garlic and cook for another 30 seconds, until fragrant. 4. Clear a space in the center of the pot. Add the tomato paste and let caramelize undisturbed for 1–2 minutes, then stir into the vegetables. 5. Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for a few minutes to reduce slightly. 6. Stir in the crushed tomatoes and beef broth. Season again with salt and pepper to taste. 7. Add the Parmesan rind, thyme sprigs, rosemary sprigs, and a bay leaf. Return the beef to the pot, ensuring it’s mostly submerged. Cover and bake for 4 hours, stirring occasionally. 8. Once the beef is tender, discard the herbs, bay leaf, and Parmesan rind. Shred the meat with a wooden spoon. For extra richness, stir in 1/2 cup heavy cream (optional). 9. Cook 1 lb pappardelle pasta according to package instructions. Serve the ragu over the pappardelle with freshly grated Parmesan. Enjoy! #ragu #ragù #pasta #cozymeal #wintermeals #cozyrecipes
