Tall, crispy, golden little clouds with soft, slightly custardy centers… made from the simplest batter and puffed to perfection in super hot oil. They’re dramatic, delicious, and way easier than they look.
Add the flour, salt, eggs, and milk to a bowl all at once and whisk until the batter is mostly smooth and thin/pourable (a few tiny lumps are fine).
Let the batter rest at room temperature for 1–2 hours.
Preheat the oven to 450°F.
Add 1 tsp avocado oil or beef drippings to each muffin tin well.
Place the empty tin in the oven for 8–10 minutes, until the oil is smoking hot.
Working quickly, remove the tin and fill each well halfway with batter.
Return to the oven immediately and bake for 20–25 minutes (Don’t open the door).
Remove when puffed and golden. Enjoy!
