One-Pan Skillet Lasagna 🍝 Here’s how to make it: 2 tbsp olive oil (I use @wearebrightland rosemary) 1 cup yellow onion, diced 1/2 cup carrot, finely diced 1/2 cup celery, finely diced 8 cloves garlic, minced, to taste 2-3 tbsp tomato paste 1 lb ground beef or Italian sausage 3/4 cup red wine 24 oz @raoshomemade Arrabiatta 1 - 1.5 cups @kettleandfire beef broth (start with 1 then add more as/if needed) 8 oz lasagna noodles, broken 1 tsp dried basil 1 tsp dried oregano 1 tsp dried thyme Salt and pepper to taste 1 tsp red pepper flakes (optional) 1 cup ricotta cheese 1 - 1.5 cups (4-6oz) freshly shredded mozzarella cheese, to taste 3/4 cup (~4oz) freshly grated Parmesan cheese Fresh basil or parsley for garnish 1. Heat olive oil over medium heat. Sauté onion, carrot, and celery with salt and pepper for 4-5 minutes. Add garlic and cook for 30 seconds. 2. Clear a space in the pan, add tomato paste, and cook for 2-3 minutes before stirring it into the veggies. 3. Add beef/sausage, season with salt and pepper, break up with a spoon, and cook until browned. 4. Pour in wine, stir, and simmer until reduced by half. 5. Add broth and pasta sauce, season with salt and pepper, and bring to a simmer. 6. Stir in lasagna noodles, cover, and simmer on low for 15-20 minutes, stirring occasionally. Add more broth if needed. 7. While noodles cook, mix ricotta with 1/4 cup parmesan, salt, and pepper. Preheat broiler. 8. Once noodles are tender, turn off heat and stir in ricotta mixture. 9. Top with mozzarella and remaining parmesan, broil until golden. 10. Let sit for 5 minutes, garnish with basil or parsley, and serve with extra parmesan.
