One Pan Marry Me Chicken Orzo

1. In a large sauce pan, heat a touch of sun-dried tomato oil and 1 tbsp butter over medium heat. Season and cook your chicken until no longer pink and set aside. Let rest for 10 minutes, then cut into bite-sized pieces.
2. Reduce heat to low and add in another 1/2 tbsp of butter along with your shallot and seasonings. Saute for about 3-4 minutes. Add in your garlic and cook for another minute.
3. Add in your tomato paste and stir to combine. Cook for 2-3 minutes.
4. Pour in your chicken broth, scraping up any brown bits on the bottom of the pan, and season with a pinch of salt and Tony’s.
5. Bring to a simmer and pour in your orzo. Cook for about 10-12 minutes, stirring occasionally. You might need to add more broth as it cooks, so just keep an eye on it.
6. Once your orzo is done, add in your half & half, touch of butter, sun-dried tomatoes, basil, cooked chicken (and juice), and spinach. Stir until spinach is wilted. Add in your parmesan and stir.
7. Serve immediately and top with more fresh parm. Enjoy!
