Creamy Tortellini & Sausage Soup

1. In a large pot, cook your Italian sausage. Set aside. 
2. In the same pot, over medium heat, melt your butter. Sauté your onion, celery, garlic, and Italian seasoning for about 4-5 minutes or until translucent. Add in your salt, pepper, and red pepper. 
3. Whisk in your flour and cook for about 1-2 minutes. Add in your wine, tomatoes, and chicken broth. Adjust seasoning as needed. Add in your parmesan rind and simmer on low, uncovered, for about 20-30 minutes. 
4. Once finished, remove your parmesan rind. Add in your frozen tortellini, parmesan, cooked sausage, and heavy cream. Stir to combine and cook for another 5 minutes. Adjust seasoning as needed. 
5. Add in your spinach and stir until wilted. Serve immediately and top with extra parm. Enjoy!
